WHAT IS THE BOSTON BUTT?

The Boston Butt is essentially the pork shoulder with the scotch still attached. It has also had the ribs, the rind and most of the fat cap removed. It is a well marbled cut with lots of fat. When cooked low and slow, the fat in the meat renders and bastes the meat, resulting in incredibly tender and flavour-filled meat.
