WHAT ARE ST LOUIS PORK RIBS?
This cut comes from the pork belly part of the pig, which is why they are so meaty and juicy. Most common rib racks are baby backs, spare ribs and the St Louis. In our video module we are barbecuing St Louis Style. St. Louis style ribs are meatier than baby back ribs and are more evenly shaped, making them easier to cook.
